Induction-Ready Cookware: What Works and What Doesn't

The cookware requirement is the most-cited objection to induction and usually the smallest problem in practice. Most kitchens already own mostly compatible pans — because cast iron and stainless steel dominate, and both generally work.

How do you test if a pan works on induction?

The definitive check, and it takes seconds.

Hold a magnet against the bottom of the pan.

  • Sticks firmly → works on induction
  • Weak attraction → may work poorly, unreliably, or not at all
  • No attraction → won't work

A refrigerator magnet is adequate. Test each pan individually — brands vary, and different pieces within the same set are sometimes constructed differently.

Look for the induction symbol — many manufacturers mark compatible cookware with a coil symbol or the word "induction" on the base or packaging.

Why does pan flatness matter on induction?

Two properties matter almost as much as the material.

Flatness. The magnetic field weakens rapidly with distance, so a warped or convex base performs badly — uneven heating, slower response, lower efficiency. Set a pan on a flat counter and check whether it rocks or whether light shows under the center. Old, heavily used pans are the usual offenders.

Base diameter. Most induction elements detect the pan before activating, and a pan much smaller than the element may not be recognized. Small saucepans and milk pans are the common problem. Some cooktops have a small element specifically for this; check the minimum pan diameter in the manual.

Base thickness. Thin pans can heat in a ring matching the coil rather than evenly across the base. Pans with a thick, conductive base layer spread the heat out — which is exactly what quality clad cookware is designed to do.

Interface disks: a limited tool

An induction interface disk is a magnetic plate you set on the element, with the non-magnetic pan on top. The disk heats and transfers heat to the pan by conduction.

It works, and it defeats most of the point:

  • Slower — you're now heating a disk and waiting for it to heat the pan
  • Less responsive — the disk retains heat, so power changes lag
  • Less efficient — heat escapes from the disk to the air
  • Awkward — the disk stays hot after cooking and needs handling and storage

Reasonable for one irreplaceable pan. Not a strategy for equipping a kitchen.

What to replace first

If some of your cookware fails the test, prioritize by how often you use it:

  1. Your main skillet — the most-used pan in most kitchens
  2. Your largest pot — stockpot or pasta pot
  3. Your everyday saucepan
  4. Specialty items, as needed

A cast iron skillet and a magnetic-base stockpot cover most cooking, and cast iron is inexpensive.

Common items that fail: aluminum stockpots, copper saucepans, some non-stick pans with aluminum bodies and no magnetic base, and glass or ceramic bakeware used on the stovetop.

If you're replacing pieces: what the market looks like

The construction lesson from above, applied to what's actually sold: fully-clad stainless (layers bonded through the whole body, not a disk glued to the base) is what behaves best on induction; cast iron and carbon steel are induction-native; and nonstick needs a manufacturer-confirmed induction base — one major brand's most popular nonstick line is explicitly not induction-compatible, so check the specific line, not the brand.

Can you use a wok on induction?

Worth its own note, because it's the genuine weak point.

Traditional wok cooking uses a round-bottom wok with flame wrapping the sides. Induction heats only where the pan contacts the flat surface, so a standard flat induction top gives you a hot spot at the base and cooler sides.

Options:

  • A flat-bottom carbon steel wok — works, but isn't traditional technique
  • A dedicated induction wok unit with a concave element — these exist and work well
  • Keep a portable gas burner for wok cooking specifically, if it matters enough

Care of the glass surface

Since induction tops are glass:

  • Lift pans, don't slide them. Rough cast iron in particular can scratch the surface.
  • Check for grit on pan bottoms before setting them down.
  • Clean spills once cool — they're far less likely to bake on than on radiant electric, since the surface isn't generating heat.
  • Avoid dropping heavy cast iron onto the glass.

Before you buy the cooktop

Do the magnet test on your whole collection first. It's free, it takes ten minutes, and it converts a vague worry into a specific list — usually a short one.

If replacing several pieces would be a real cost, factor it into the project budget alongside the electrical circuit, which is the larger expense. A portable induction burner is also a cheap way to test both the cooking experience and your existing pans before committing.

The bottom line

Take a magnet to every pan — if it sticks firmly, it works. Cast iron, carbon steel and most stainless already qualify, so most kitchens need to replace only a few aluminum or copper pieces. Flatness and base diameter matter alongside magnetism. Interface disks are a workaround for one beloved pan, not a plan, and round-bottom wok cooking is the one technique induction genuinely doesn't replicate.
