Induction vs Gas Cooking: An Honest Comparison

Cooking used to be the sticking point in electrification — the appliance keen cooks refused to convert. Induction changed that, and it's worth being specific about where it wins and where gas genuinely still has the advantage.

What is induction better at than gas?

Boil speed. Induction generates heat directly in the pan through a magnetic field rather than heating air beneath it. Almost nothing is wasted heating the room or the burner. For getting a large pot to a boil, it's clearly the fastest of the three common options.

Precision and responsiveness. Power changes take effect immediately, as they do with gas — but induction adds reliably repeatable low settings. Holding a genuine low simmer or melting chocolate without a double boiler is easier than on gas, where a low flame can be uneven or blow out.

A cooler kitchen. Because the heat is generated in the pan, far less escapes into the room. Noticeable year-round and a genuine relief in summer or in a small kitchen.

Cleanup. A flat glass surface with no grates, burner caps or gas ports. Because the surface itself only gets hot from contact with the pan, spills are much less likely to bake on.

Safety. No open flame, no gas connection to leak, no combustion. The surface cools relatively quickly, and most units won't activate without a suitable pan on the element.

Air quality. This is the one that doesn't depend on preference. A gas range releases combustion byproducts into the kitchen unless a ducted range hood is present, adequately sized, and actually used — which is far from universal. What is gas still better at than induction?

Open-flame techniques. Charring peppers directly on the burner, toasting spices or tortillas over the flame, flambé. These need actual fire, and induction can't do them.

Wok cooking. Traditional wok technique uses flame wrapping up the sides of a round-bottom wok. Induction heats only where the pan contacts a flat surface. Induction wok units with concave elements exist, but a standard flat induction top is a compromise for serious wok work.

Cookware freedom. Gas heats anything. Induction needs magnetic pans — no aluminum, copper or glass unless they have a magnetic base layer.

The cookware question, settled quickly

Take a magnet to your pans. If it sticks firmly to the bottom, that pan works on induction.

Works: cast iron, enameled cast iron, carbon steel, most stainless steel, and any pan marked induction-compatible.

Doesn't: aluminum, copper, glass and ceramic, unless they have a bonded magnetic base.

How much more does induction cost to install?

This is the real cost of switching, and it's electrical rather than the appliance.

A gas range needs only a small 120V receptacle for its controls and igniter. An induction range or cooktop needs a dedicated 240V circuit sized to the appliance.

If the kitchen has no such circuit — and in a gas kitchen it usually doesn't — the job includes running one from the panel, which depends on distance and how much finished surface it crosses.

Is induction cheaper to run than gas?

Cooking is a small share of household energy compared to heating and water heating, so the operating-cost difference between induction and gas is minor in absolute terms — a rounding error next to a heating conversion.

Induction is efficient enough that the gap is much smaller than it would be for radiant electric. Quirks worth knowing

  • Some units buzz or hum at high power, particularly with lighter pans. Heavier, flat-bottomed cookware reduces it.

  • Pan size matters — a small pan on a large element may not be detected.
  • Warped pan bottoms perform poorly, since contact is everything.
  • Rough cast iron can scratch the glass surface if dragged. Lift, don't slide.
